We went over flip ingredients individually, but never went into the description of what the cocktail is as a whole. And the eve of a new year feels like as good a time as any to reminisce, sitting around the fire, drinking, and telling tall tales of years gone by.

21. Flips: The Seasoning – Amaro
Amari (plural for an amaro) aren’t in a lot of flip style drinks, but they are fun to experiment with since they provide both spice and bitterness like a typical cocktail seasoning ingredient.

Well, when we did the bitters & seltzer experiment we saw how sparkling water can dilute or spread out flavors that were pretty concentrated before, and how the bubbles bring more of the bitters’ smell up to your nose.

At its most basic level, any two-ingredient rail drink qualifies as a highball, but the ingredients, the preparation, and the presentation are what make these cocktails shine.
